We're on the lookout for a part time evenings event manager.
You'll need to be pretty flexible as the hours will go up and down each week depending on how busy we are, but we guarantee there will be at least 15 hours work a week, spread over 3 days.
As always we're looking for someone who will provide that extra special wallacespace service - understanding what our evening clients need to make their time with us run smoothly. You'll also need to be competent and confident with IT and AV equipment and have common sense in spades.

Wednesday's taster evening

The taster evening on Wednesday was a great success, we'll have some pictures next week but for now, here's how to make a Thai Beef Salad the wallacespace way...

Simple Thai beef salad recipe

AKA posh steak and salad, this is a Thai classic that's good for 'in on your own' or to wow your friends with. It offers great value because the steak goes much further used sliced like this in a salad and is healthy, simple and quick. If you don't have or can't get all the right ingredients, substitute at will. Suggestions below. This recipe serves 4 and takes about 20 mins to prepare.

Ingredients:

8oz rump steak (don't use fillet - it's likely to get drowned out by these strong flavours)

The dressing:

2 cloves garlic

tsp black peppercorns

a chilli (hot)

1-2 tsp sugar (sweet)

1-2 tbsp lime juice (sour)

3-4 tbsp fish sauce (salt)

The salad:

1/2 a sliced red onion

3-4 tomatoes quartered

1/2 cucumber, sliced

lettuce leaves of choice

The wow factor extras:

coriander

mint

basil (normal/ Holy or sweet)

Griddle the steak for 2-3 mintues per side depending on how rare or not you like it. Set aside to rest and yield it's juices. Meantime, in a pestle and mortar, crush the garlic with black peppercorns to form the base of the dressing. Then add your Big 4 Thai tastes: chilli & sugar followed by the fish sauce & lime juice. Adjust more sweet/ hot/ sour and salt according to taste until you are happy with the balance. Experiment.

When rested, slice your steak into long thin strips and add to this all the meat juices, tomatoes and oniions. Set aside for 20-30 minutes if you have the time to allow the flavours to meld. On a serving plate, make a bed of lettuce, cucumber and any of the 'wow factor extras' that interest you. Lay the beef mixture with all its juices in a pile on the middle of the plate. Finish with a few coriander leaves if you have some to spare. Serve with steamed rice.

Substitutions

If you haven't got all the right stuff, improvise. Some workable substitutions are:

Fish sauce (salt) - salt and water, soy sauce

Lime juice (sour) - lemon/ grapefruit, vinegar

Chilli (hot) - any kind - bonnets, birds eye, big ones, small ones

Sugar (sweet) - white, brown or borrowed!

Tip

Fish sauce to lime juice proportions = 1:2

Thai Beef Salad Recipe

Here is the recipe for the Thai beef salad our chefs taught us how to make at the PA taster evening last month...enjoy

Ingredients:
200gms beef fillet
1 small red onion (finely sliced)
1 small handful of coriander leaves
1 small gem/cos lettuce (leave separated)
Pinch of ground, roast rice (dry fry jasmine rice until toasted brown, then grind in a spice grinder)
Freshly ground black pepper
1 handful of Thai basil leaves
Cherry vine tomatoes

For the marinade:
2 tablespoons soy sauce
1 tablespoon fish sauce
1 tablespoon grated palm sugar

For the dressing:
1 lemongrass stalk (finely chopped)
1 large red chilli (deseeded)
2 small green chillis (chopped)
3 cloves garlic (chopped)
1/2 tablespoon grated palm sugar
2 tablespoons fish sauce
Juice of 3 limes
4 thinly sliced lime leaves

To make the marinade:
Mix the soy sauce, fish sauce and palm sugar. Add the beef and marinade overnight (remove from the fridge 2 hours prior to cooking).
Heat a cast iron griddle until red hot. Sear the beef to form an outer crust (about 3/4 minute on each side, depending on how pink you like your beef). Rest for 5 minutes then slice thickly across the grain.
Toss the beef, onion, Thai basil and coriander leaves with some of the dressing and serve on a bed of salad with cucumber, tomatoes and thinly sliced red onion.
Drizzle with extra dressing and serve with roast rice to sprinkle, freshly roasted peanuts and extra sliced chilli for those that like it hot!

Kristina's home baked flapjack recipe...

Clients at Wallacespace St Pancras have been enjoying an extra treat this week. The lovely Kristina who works in our caffe has been baking. Her flapjacks are probably the best we've ever tasted and after much cajoling we finally managed to prise the recipe from her to share with you...

You will need:
400g porridge oats
200g butter
150g sugar
340g honey
100g mixed nuts
100g mixed dried fruit (raisins, cranberries etc)

To make the flapjacks:
Melt the butter and add the sugar, then when it starts to caramelise add the honey. Mix the oats with the fruit and nuts and add this to the butter, sugar and honey mixture.

Stir it all together and spoon into a baking tray lined with baking paper. Bake for 20 mins at 180 degrees c until the flapjacks are golden. Allow to cool and cut into squares.

Hope you enjoy them as much as we did!

Wednesday evening saw a team of chefs take over our caffe at wallacespace St Pancras to cook up a storm in the name of teambuilding with a three course dinner and (plenty of) drinks afterwards.

On Thursday evening we hosted a taster evening for PAs with the Global PA Network. This was our second event - we just didn't have space for everybody on the first evening!
Our Covent Garden head chef Mateusz showed how to make the tasty Thai beef salad from our lunch menu, watch this space for more photos and a video, as well as the recipe for anyone who couldn't make it to our taster evenings.

Cocktails and cupcakes with the Hummingbird bakery

Last Wednesday Wallacespace hosted an evening of cocktails and cupcakes in our Covent Garden networking space with Hummingbird Bakery and Bec Development.

12 women from the media industry attended this fun networking event and learned how to make Hummingbird's sensational cupcakes.

"Dear Anna

I just wanted to send you a somewhat belated note to say many thanks for making our evening workshop on Thursday 24th, at Euston, such a smooth and pleasant experience!
It all went really well, and all the delegates commented on the lovely feel of the place (as well as the excellent catering)! As a couple of them are training or marketing managers in large companies and weren’t previously aware of Wallacespace, I do hope you also get some repeat business out of it.
And, of course, Pilar and I are planning to run our future ‘Power and Focus’ workshops in Wallacespace too. At the moment, we’re negotiating with a large staff wellbeing company who will hopefully take these on, and market them for us.

Wallacespace family outing

Yesterday was our annual Wallacespace summer 'do' and we did it in (unusual) style with a tour of London in an amphibious 'duck' - one of the converted world war II vehicles that drive on land and also on the Thames. All good fun and we earned ourselves the title 'most enthusiastic tour group ever', then we went to Ping Pong dim sum restaurant on the South Bank for far more food than was strictly sensible.

One of our account managers, Lorna, proved that Wallacespace staff are always prepared for anything by pulling out a change of clothes when one of the waitresses dropped 7 bottles of Tiger Beer on her!

We'll be having our 15 minutes of fame tomorrow evening when Wallacespace St Pancras stars in ‘Lennon Naked’ on BBC 4 (for all of about 3 seconds).
